Day 154: My Lover

my lover is the breeze
that breathes against my neck.

he is the sun that warms my shoulder
on crisp, autumnal days
he showers me in gold and heat
and bathes me in his rays.

my lover is as loyal
as the seasons of the year.

he returns with natural bounty
hiding treasures at my door.
he takes all that he wants from me
and leaves me filled with more.

he is the tide I rise and fall in.
he is the oxygen I drown in.

·

my lover is the sculptor
of my shape and silhouette.

he takes the pink from evening’s sky
and puts it on my cheek.

he takes the green from woodland’s pine
and sets it in my eye.

from the heavens he plucks freckles,
and decorates my chin,

and from the snow-capped mountains,
he carves and smoothes my skin

he is my craved sovereign
and I am his delight.
he is the moon that stares back at me
and illuminates my night.

though I have never seen him, thus,
and he has not seen me
all this does course between us
and we’ll forever be

the match that needs no flint
and the ember without air
white stone, igneous and glowing –
alive, immutable, and rare.

Day 153: Sh’Mocha Bars

Day 153: Sh’Mocha Bars


There is only one appropriate response to finding a product called “Coffee Syrup” at your local Trader Joes: you purchase it, let it sit on your kitchen counter for a week, and allow your mind to subliminally conjure up recipes with it. Dousing pancakes in it is clearly not enough…

I concocted this little ditty inspired by autumnal campfires, conceptual seven-layer bars, and of course, the love of coffee.

I give you:

Sh’Mocha Bars


Ingredients:

  • 1 stick butter (8 Tablespoons)
  • 1 ¼ cup graham cracker crumbs
  • 1 ¼ cup semi-sweet chocolate chips
  • ½ teaspoon salt
  • 26 (ish) Marshmallows, cut in halves or fourths*
  • ½ cup Coffee Syrup

 

Heat your oven to 325°

Put the butter in a 9” deep dish pie plate and put it in the oven

until it’s all melty.

Toss the graham cracker crumbs on top of the butter

and combine them with a fork until there’s no dry crumb remaining.

Press the crumbs down into a crust with the back of your fork

top with chocolate chips and sprinkle with salt,

then evenly distribute the marshmallows,

and drizzle with coffee syrup.

Bake at 325° for 20 minutes. Watch it though, as marshmallows do like to puff up, and if you see they’re about to spill over the edge of your pie plate, just open the oven door and they’ll deflate a bit.

When they’ve baked for 20 minutes and they look gooey, turn on your broiler to 500° and broil for 2-3 minutes.

Watch this the whole time… you know when your campfire marshmallow ignites in flame and you quickly bring it to your face to blow it out??? Yeah, you don’t want to do that with 26 of them in your oven. Just saying.

Take the pan out of the oven and let cool completely. Chill for at least an hour.

Cut with a very sharp knife. If the marshmallow is sticky, spray cooking oil on your knife.

O good grief. This is ridiculous.


*Fresh marshmallows are easier to cut than old, sticky ones. You can still break the sticky ones though, by spraying cooking spray on your finger tips and pulling them in to pieces. Cutting them is an exercise in futility. Work smart.

here come the arrows
here come the darts
here come the wounds
to find their fated marks

and all the spears and tears and the endurance of ugly years

I recently attended a casual concert. It was a small gathering and there was a pot-luck style dinner for all to enjoy while hearing some stellar musicians jam. One of the dishes served was made by the guitarist Billy McLaughlin. (His Chicken Makhani was gone by the time I got through the line…) This boy can play, and this boy can cook.

He shared his Thai inspired cole slaw with me in exchange for my Naan recipe. This cole slaw is quite unlike the American version; not creamy, but tangy and spicy and fresh and I loved it. I’ve done my best to recreate it here and it’s good – don’t get me wrong – but I think he held out a secret or two. It’s not as good as it was that night. Maybe there’s not enough live music in my kitchen whilst I whip it up…


Ingredients:

  • 1 cup shredded red cabbage
  • 2 cups shredded green cabbage
  • 1½ cups matchstick carrots
  • ¼ cup chopped scallion
  • 4 Tablespoons lime juice (approximately two limes)
  • 2 Tablespoons chopped cilantro
  • 2 Tablespoons sugar
  • 2 teaspoons canola oil
  • ½ Tablespoon sesame oil
  • 1½ teaspoons grated fresh ginger
  • 1½ Tablespoons Thai Sweet Chili Sauce*
  • salt and pepper to taste

Ready? This is so easy….

Juice your limes,

Combine the lime juice with the sugar, oils, ginger, chili sauce and salt and pepper.

Chop and shred your veggies,

and chill for 20 minutes before serving.

Add this to a fish taco and we’re in business.


*the brand of Thai Sweet Chili Sauce will greatly effect the taste of this dish. They’re not all alike and range in flavor. I used Full Circle Organic, but I think there are better choices. Try Mae Ploy if you can find it.

some would argue
i should have turned around
at the first drop
that hit my cheek

some would say
that the flashes in the distance –
hazard whites on darkening blues –

were my warning

to stay home,
go back in,
keep under glass.

 

i don’t know if it was the addictive little crunch of gravel beneath my feet
that kept me going

i don’t know if it was the cry of the bawling windmill –
siren song in metal spires –
that propelled me on

i don’t know if it was the thunder
that rolled above
like a harmony to the hunger inside me

but i just kept on walking.

 


i walked into a storm and found the wind to be at my back

i walked into the rain and found it to be cleansing

i walked over wet stone and found

it forgave my missteps

and erased my wrong footings

and stayed the hopeful emissary to my every next step.

what i really want to say is:
i can’t remember

i can’t remember what it was like to feel safe

there is ache when we fly
in search of nest

to bide in empty rest

there is a memory
pushed far back and down

was it love?
is it still?

there is ache from what I can’t recall
and fear that i might lose it all

I’m pretty sure we fall in love thinking that it will be the end of hurt.

·

But love itself is a testament to survival WITH hurt.

It is the product of pain given

and pain received,

and the perseverance of kindness between.

·

It is the bond that holds in spite of itself.

·

I shall not begrudge the hurts I’ve felt

I’ll beg forgiveness for those I’ve issued.

They were all done

with the intent of loving

and being loved

in return.
